Yamadaho is a pure strain of rice that is the origin of Yamadanishiki, and is considered among the rarest, most valuable of rice. The sake it produces has an assertive acidity that fills the mouth but finishes with a smooth, clean tail. We age this sake for 18 months at low temperatures to further develop the umami richness, resulting in a sake that now sits on the menu at starred restaurants in France.
